I am so bad at not doing anything. I always have a million things planned and scheduled. Yet today, I took somewhat of a break and lounged about. It felt great. Then I had that moment when I realized that the my friend's borrowed cat was being more active than me...and I felt a bit judged.

"Risotto doesn't like to be rushed" my friend wisely says, and she is so right. After 2 hours of mindlessly stirring rice I wonder why I even attempt risotto on a weeknight. I'm not going to pretend this was my best but once I use up 3 times the amount of chicken broth the recipe calls for (like every other time) it's finally done. And each time I finally finish risotto I wonder if it's worth it and it always is. It just requires way too much patience for this woman. I'm tempted to try to draw some kind of analogy between risotto and being patient in life, but I'm just going to leave it and eat my risotto. And that's the truest story I can tell you this Thursday night.
